ARRABIATA SPICY RED SAUCE PASTA

Ingredients
175 gm NUTARO pasta
2 Large tomatoes (220gm approx)
2 tbsp olive oil
1 tsp garlic
2 tsp crushed red chili flakes
1/4 tsp oregano
1/4 tsp black pepper
1/4 tsp sugar (optional)
1 tsp basil leaves
Parmesan cheese
Salt as per taste
Preparation
Boil 175 gm NUTARO pasta as per instructions on the box.
Finely chop garlic.
Peel and roughly chop 2 large tomatoes (220 grams). Add them in a blender or a food chopper or processor.
Without adding any water, blend to a smooth puree. Keep aside. If using ready made tomato puree, then add 1 cup tomato puree.
Method
Heat olive oil in a pan on a low or medium flame. Then add finely chopped garlic. Saute for some seconds. No need to brown the garlic.
Then add crushed red chili flakes. Stir and mix well. You can reduce or increase the quantity of red chili flakes as per taste. Instead of red chili flakes, you can also add ½ teaspoon red chili powder.
Add the tomato puree.
Add salt as per taste.
Mix well and cover the pan with lid.
On a low flame, simmer the sauce till the raw flavor and taste of tomatoes goes away. Add some water (about ¼ cup) if the tomato puree start sticking to the pan. when you see some oil specks on the sauce, this means that the tomato puree is cooked.
Add dried oregano, black pepper.
You can also add ¼ teaspoon sugar, if the tomatoes are too tangy, then only add sugar. Mix well.
Add the boiled NUTARO pasta.
Mix well, so that the sauce coats the pasta evenly.
Switch off the flame and add 1 teaspoon chopped basil leaves.
Serve pasta arrabiata hot with some vegetarian Parmesan cheese/processed cheese grated on top.
